Sabzi-polow with fish


– rice: 700 grs

– special herbs (chives, parsley, dill, coriander, fresh garlic): 500 grs

– sour orange

– brewed saffron: 2 tablespoons

– lettuce: a few leaves

– barberry: 70 grs

– oil

– trout fish: 2

– flour: 1.2 measuring cup

– turmeric: 1.2 tablespoon

– salt & black pepper


Boil rice in a saucepan of hot water, salt and turmeric, and give it time to be half- cooked. Drain the rice. Mix the chopped herbs with the drained rice. Pour some liquid oil in the saucepan and place the lettuce leaves on the bottom of it with the rice and herbs piled on them. Scatter the sour orange zest on the rice and brew it for 45 to 60 minutes. Then cut the fish from the belly and take out the backbone. Make the fish tasty with salt and pepper. Rub it to a mixture of flour and turmeric, and fry it in the hot oil. Finally, serve the rice with sautéed barberry and brewed saffron.
